Ingredients

boneless, skinless chicken thighs
Vegetables

diced carrots

diced celery

diced onion

diced tomatoes

green beans, trimmed and cut into 1-inch pieces

corn (fresh or frozen)

Instructions
Heat olive oil in a large pot over medium heat.
Sauté onions, carrots, and celery for 5 minutes until softened, then add garlic and cook 1 minute.
Add chicken thighs and brown on all sides.
Pour in diced tomatoes and chicken broth, add green beans, corn, thyme, paprika, salt, and pepper. Bring to a boil.
Reduce heat, cover, and simmer for 25-30 minutes. Shred chicken, return to pot, and cook 5 more minutes. Garnish with parsley.
