Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs

Vegetables

  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 1 can (15 oz) diced tomatoes
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 cup corn (fresh or frozen)

Spices & Oils

  • 1 tsp dried thyme
  • 1 tsp paprika
  • salt and pepper to taste salt and pepper
  • 2 tbsp olive oil

Garnish

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Sauté onions, carrots, and celery for 5 minutes until softened, then add garlic and cook 1 minute.
  • Add chicken thighs and brown on all sides.
  • Pour in diced tomatoes and chicken broth, add green beans, corn, thyme, paprika, salt, and pepper. Bring to a boil.
  • Reduce heat, cover, and simmer for 25-30 minutes. Shred chicken, return to pot, and cook 5 more minutes. Garnish with parsley.
