Ingredients

Dry ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet ingredients

  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract

Main ingredients

  • 1 cup peeled and diced apples (such as granny smith)
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup chopped walnuts or pecans (optional) (optional)
  • 1 cup apple pie filling (optional, for topping) (optional)
  • whipped cream or frosting for serving

Instructions 

  • Preheat oven to 350°F (175°C) and line a cupcake pan.
  • Mix dry ingredients, then combine wet ingredients and fold into dry.
  • Fold in apples, cinnamon, nutmeg, and nuts (if using).
  • Divide batter into liners and bake for 18-20 minutes.
  • Cool, then top with apple pie filling and whipped cream before serving.

Notes

For extra flavor, add a sprinkle of cinnamon on top before baking.
