1 1/2 cups granulated sugar
1/2 cup packed light brown sugar
2 large eggs
1 teaspoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/4 teaspoon salt
2 cups peeled and diced apples (about 2 medium)
3 tablespoons granulated sugar
1 1/2 teaspoons ground cinnamon
Instructions
Preheat oven to 350°F. Grease a 9x13 inch baking pan.
Cream butter and sugars. Beat in eggs and vanilla.
Whisk together flour, baking soda, cream of tartar, and salt. Gradually add to wet ingredients.
Stir in diced apples.
Combine remaining sugar and cinnamon. Press half the dough into the pan, sprinkle with cinnamon-sugar, and crumble remaining dough on top.
Bake for 25-30 minutes, or until golden brown. Cool completely before cutting.

For best results, use a mix of sweet and tart apples.
