These Apple Snickerdoodle Bars are a delightful twist on the classic cookie, featuring soft, chewy bars packed with diced apples and a cinnamon-sugar swirl. Perfect for a fall treat!

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 2 cups peeled and diced apples (about 2 medium)
  • 3 tablespoons granulated sugar
  • 1 1/2 teaspoons ground cinnamon

Instructions 

  • Preheat oven to 350°F. Grease a 9x13 inch baking pan.
  • Cream butter and sugars. Beat in eggs and vanilla.
  • Whisk together flour, baking soda, cream of tartar, and salt. Gradually add to wet ingredients.
  • Stir in diced apples.
  • Combine remaining sugar and cinnamon. Press half the dough into the pan, sprinkle with cinnamon-sugar, and crumble remaining dough on top.
  • Bake for 25-30 minutes, or until golden brown. Cool completely before cutting.

Notes

For best results, use a mix of sweet and tart apples.
