A delightful and refreshing Berry Cheesecake Salad that combines the creamy richness of cheesecake with the vibrant flavors of fresh berries. This easy-to-make dessert is perfect for any occasion!

Ingredients

Cheesecake Base

  • 16 ounces cream cheese (softened)
  • 1/4 cup monk fruit concentrated powder
  • 1/4 cup stevia concentrated powder
  • 1 cup heavy whipping cream

Berries

  • 16 ounces strawberries (cut into bite sized pieces)
  • 14 ounces blueberries (about 4 cups)
  • 12 ounces blackberries (about 2 cups)
  • 6 ounces raspberries (about 1 cup)

Optional

  • 2-3 teaspoons vanilla extract (optional)

Instructions 

  • Beat cream cheese with electric mixer until smooth.
  • Add in monk fruit, stevia, heavy whipping cream, and vanilla extract (if using). Beat until thick and creamy. Add extra cream if too thick.
  • Fold in fresh berries. Store in fridge or serve immediately.

Notes

For a richer flavor, let the salad chill in the refrigerator for at least 30 minutes before serving.
