These biscuits are a delightful alternative when you're out of baking powder. They're light, fluffy, and perfect for breakfast or as a side.

cold unsalted butter
(cut into small pieces)

cold buttermilk
Instructions
Preheat oven to 450°F (232°C).
Whisk together flour, baking soda, cream of tartar, and salt.
Cut in butter until mixture resembles coarse crumbs.
Add buttermilk and stir until just combined. Do not overmix.
Turn dough out and pat into a 3/4-inch thick circle.
Cut out biscuits.
Place biscuits on an ungreased baking sheet.
Bake for 12-15 minutes, or until golden brown.
Serve warm.
Notes
For extra fluffy biscuits, make sure all your ingredients are very cold.
