A hearty and flavorful Cajun potato soup perfect for warming up on a chilly day. Creamy, spicy, and satisfying, it's easy to make and full of bold flavors.

Ingredients

Vegetables

  • 4 large potatoes, peeled and diced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons cajun seasoning

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion, bell pepper, and celery until softened, about 5 minutes.
  • Add garlic and cook for 1 minute.
  • Stir in potatoes, Cajun seasoning, salt, and pepper; add broth and bring to a boil.
  • Simmer until potatoes are tender, then partially mash for creaminess. Stir in heavy cream, heat through, and garnish with green onions.

Notes

Adjust seasoning to taste and serve hot.
