Cake
19x5-inch loafpound cake(cut into 1-inch cubes)
Cheesecake Filling
8ouncefull-fat cream cheese(softened to room temperature)
0.5teaspoonvanilla extract
2.25cupswhipped cream
Berries
5cupsfresh mixed berries(sliced (I use strawberries and blueberries))
Whipped Cream Topping
2.5cupsheavy whipping cream
0.25cuppowdered sugar
1teaspoonvanilla extract
Instructions
Make the Whipped Cream: Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Reserve 2 1/4 cups. Refrigerate the rest.
Make the Cheesecake Filling: Beat cream cheese until creamy. Add vanilla and reserved whipped cream. Beat until combined.
Assemble: Layer pound cake, berries, and cheesecake filling. Repeat. Top with remaining pound cake, berries, and whipped cream. Garnish with berries.
Serve immediately cold or refrigerate for up to 6 hours. Store leftovers in the refrigerator for up to 3 days.
