Instructions 

  • Preheat oven to 400°F (200°C).
  • Combine vegetables, olive oil, Italian seasoning, red pepper flakes (optional), salt, and pepper in a bowl. Toss to coat.
  • Spread vegetables on a baking sheet and roast for 20-25 minutes.
  • Drizzle with heavy cream, sprinkle with Parmesan and mozzarella cheese.
  • Return to oven and bake for 5 minutes, until cheese is melted.
  • Garnish with fresh basil before serving.

Notes
