Ingredients

Dough

  • 0.5 cup salted butter (softened)
  • 0.75 cup light or dark brown sugar
  • 1 large egg (at room temperature)
  • 1 tsp pure vanilla extract
  • 0.75 cup all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp ground cinnamon (optional)
  • 0.25 tsp fine salt
  • 1 cup rolled oats
  • 0.33 cup quick oats
  • 1 cup dark chocolate (55-70% cocoa)

Instructions 

  • Mix butter, brown sugar, and vanilla until smooth and fluffy. Add egg and combine well.
  • Whisk together flour, baking soda, baking powder, cinnamon (if using), and salt in a separate bowl.
  • Combine dry ingredients with wet mixture, then fold in oats and chocolate chips.
  • Refrigerate dough for 1-2 hours, then scoop onto baking sheets and bake at 350°F for 10-12 minutes.
  • Cool cookies on a wire rack before serving.

Notes

For chewier cookies, refrigerate the dough longer before baking.
