1.5 lbs cooked chicken, shredded or cubed
1 (24 ounce) jar marinara sauce
1 (15 ounce) container ricotta cheese
1/2 cup grated parmesan cheese
1 teaspoon italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
2 cups shredded mozzarella cheese
optional: fresh basil, chopped, for garnish
Instructions
Preheat oven to 375°F (190°C).
Combine chicken, marinara sauce, ricotta cheese, Parmesan cheese, Italian seasoning, garlic powder, and black pepper in a bowl.
Spread half of the chicken mixture in a 9x13 inch baking dish, then sprinkle with 1 cup of mozzarella cheese.
Spread the remaining chicken mixture over the mozzarella cheese, and top with the remaining 1 cup of mozzarella cheese.
Bake for 20-25 minutes, until cheese is melted and bubbly.
Let stand before serving. Garnish with fresh basil, if desired.
Notes
For a spicier casserole, add a pinch of red pepper flakes to the chicken mixture.
