1cupshredded cheese (cheddar or monterey jack)
4largeflour tortillas
1bell peppersliced bell pepper
1smallonion, sliced
1tablespoonolive oil
1teaspoontaco seasoning
sour cream and salsa for servingsour cream and salsa(for serving)
Instructions
Heat olive oil in a skillet over medium heat.
Sauté sliced onion and bell pepper until softened.
Mix shredded chicken with taco seasoning.
Layer chicken, vegetables, and cheese on half of each tortilla, then fold in half.
Cook folded quesadillas in skillet for 3-4 minutes per side until golden and cheese melts.
Slice into wedges and serve with sour cream and salsa.
