Delicious and easy-to-make chicken quesadillas perfect for a quick lunch or dinner. Filled with shredded chicken, cheese, and sautéed vegetables, then grilled to golden perfection.

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or monterey jack)
  • 4 large flour tortillas
  • 1 bell pepper sliced bell pepper
  • 1 small onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Sauté sliced onion and bell pepper until softened.
  • Mix shredded chicken with taco seasoning.
  • Layer chicken, vegetables, and cheese on half of each tortilla, then fold in half.
  • Cook folded quesadillas in skillet for 3-4 minutes per side until golden and cheese melts.
  • Slice into wedges and serve with sour cream and salsa.

Notes

For extra flavor, add chopped cilantro or jalapeños.
