  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon fine sea salt
  • 1 cup unsalted butter (at room temperature)
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar (lightly packed)
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/3 cup instant vanilla pudding (dry mix)
  • 1 1/4 cup old-fashioned rolled oats (not quick-cooking oats)
  • 1 cup semi-sweet chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment or a silicone mat.
  • Whisk together flour, baking soda, and salt; set aside.
  • Cream butter and sugars until fluffy, then add eggs, vanilla, and pudding; mix well.
  • Gradually add dry ingredients, then fold in oats and chocolate chips.
  • Scoop dough onto baking sheet, bake 12-14 minutes until golden, then cool and serve.

Notes

For softer cookies, slightly underbake; store in an airtight container.
