Dry Ingredients
2⅓cupsall purpose flour
3tablespoonsunsweetened dutch cocoa powder
1¼teaspoonbaking soda
Wet Ingredients
1cupsalted sweet cream butter (softened at room temperature)
¾cuplight brown sugar (tightly packed)
⅓cupgranulated sugar
2largeeggs (at room temperature)
2¼teaspoonspure vanilla extract
3.9ounceinstant chocolate pudding mix
3cupssemi sweet chocolate chips
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Mix dry ingredients in a bowl. Beat butter and sugars until fluffy. Add eggs and vanilla, then pudding mix. Gradually add dry ingredients. Fold in chocolate chips.
Use a cookie scoop to place dough onto sheets, 2 inches apart. Slightly press each cookie.
Bake for 8-10 minutes until edges are set. Rest on sheet for 2-3 minutes, then transfer to cooling rack.
Notes
For softer cookies, slightly underbake and let rest on the baking sheet.
