Ingredients

For the crust

  • 120 g butter (melted)
  • 200 g cookies (crushed)

For the filling

  • 250 g mascarpone cheese
  • 300 g whipping cream
  • 60 g powdered sugar
  • 4 tablespoons condensed milk

For the topping

  • 300 g berries (such as raspberries, blueberries, or strawberries)
  • 70 g sugar
  • 2 tablespoons cornstarch

Instructions 

  • Combine crushed cookies with melted butter. Press into a springform pan and refrigerate.
  • Whip mascarpone with powdered sugar. Whip cream until stiff peaks form. Fold cream and condensed milk into mascarpone. Pour over crust and refrigerate for 4 hours.
  • Combine berries and sugar in a saucepan. Add cornstarch and cook until thickened. Cool completely.
  • Spread the cooled berry topping evenly over the cheesecake.
  • Refrigerate for an additional 2 hours.

Notes

For a richer flavor, use full-fat mascarpone cheese.
