  • 1 lb cooked chicken (shredded or diced)
  • 12 oz penne pasta
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil or butter
  • cherry tomatoes, spinach, green onions or parsley (Optional: for garnish)

Instructions 

  • Heat olive oil or butter in a large skillet over medium heat.
  • Sauté the cooked chicken with Cajun seasoning until warmed through.
  • Add chicken broth, heavy cream, ranch seasoning mix, uncooked penne pasta, and halved cherry tomatoes; bring to a boil.
  • Reduce heat and simmer until pasta is tender (about 10-12 minutes).
  • Stir in shredded cheddar cheese and spinach until melted and creamy.
  • Serve warm, garnished with green onions or parsley.

Notes

For a spicier dish, add more Cajun seasoning or a pinch of red pepper flakes.
