Instructions
Heat olive oil or butter in a large skillet over medium heat.
Sauté the cooked chicken with Cajun seasoning until warmed through.
Add chicken broth, heavy cream, ranch seasoning mix, uncooked penne pasta, and halved cherry tomatoes; bring to a boil.
Reduce heat and simmer until pasta is tender (about 10-12 minutes).
Stir in shredded cheddar cheese and spinach until melted and creamy.
Serve warm, garnished with green onions or parsley.
Notes
For a spicier dish, add more Cajun seasoning or a pinch of red pepper flakes.
