2 lbs cooked chicken, shredded
1 head cauliflower, cut into florets
4 oz cream cheese, softened
1/2 cup heavy cream
1/2 cup chicken broth
1/2 cup shredded cheddar cheese
1/4 cup grated parmesan cheese
2 tbsp butter
1 clove garlic, minced
1/2 tsp onion powder
salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
Steam cauliflower until tender, then mash.
Combine mashed cauliflower, cream cheese, heavy cream, chicken broth, cheddar cheese, Parmesan cheese, butter, garlic, onion powder, salt, and pepper in a bowl.
Add shredded chicken and stir well.
Pour into a greased 9x13 inch baking dish.
Bake for 20-25 minutes, or until golden brown.
Notes
For a richer flavor, use a combination of cheddar and Monterey Jack cheese.
