  • 2 lbs cooked chicken, shredded
  • 1 head cauliflower, cut into florets
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 2 tbsp butter
  • 1 clove garlic, minced
  • 1/2 tsp onion powder
  • salt and pepper to taste

Instructions 

  • Preheat oven to 375°F (190°C).
  • Steam cauliflower until tender, then mash.
  • Combine mashed cauliflower, cream cheese, heavy cream, chicken broth, cheddar cheese, Parmesan cheese, butter, garlic, onion powder, salt, and pepper in a bowl.
  • Add shredded chicken and stir well.
  • Pour into a greased 9x13 inch baking dish.
  • Bake for 20-25 minutes, or until golden brown.

Notes

For a richer flavor, use a combination of cheddar and Monterey Jack cheese.
