This creamy one-pan meat and potato skillet is the perfect weeknight meal. It's quick, easy, and satisfying for the whole family.

  • 1 pound ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1.5 pounds yukon gold potatoes, cubed
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, for garnish (optional)

Instructions 

  • Brown ground beef in olive oil; drain grease.
  • Add onion and garlic; cook until softened.
  • Add potatoes, beef broth, thyme, salt, and pepper. Simmer, cover, and cook until potatoes are tender.
  • Stir in heavy cream and Parmesan cheese. Cook until sauce thickens.
  • Garnish with parsley, if desired. Serve.

Notes

For a spicier dish, add a pinch of red pepper flakes.
