This creamy one-pan meat and potato skillet is the perfect weeknight meal. It's quick, easy, and satisfying for the whole family.
Ingredients

1 pound ground beef
1 large onion, chopped
2 cloves garlic, minced
1.5 pounds yukon gold potatoes, cubed
1 cup beef broth
1/2 cup heavy cream
1/4 cup grated parmesan cheese
2 tablespoons olive oil
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley, for garnish (optional)
Instructions
Brown ground beef in olive oil; drain grease.
Add onion and garlic; cook until softened.
Add potatoes, beef broth, thyme, salt, and pepper. Simmer, cover, and cook until potatoes are tender.
Stir in heavy cream and Parmesan cheese. Cook until sauce thickens.
Garnish with parsley, if desired. Serve.
Notes
For a spicier dish, add a pinch of red pepper flakes.
