Instructions
Gather all ingredients.
Heat oil in a skillet over medium-high. Add sausage and cook until browned, 4-5 minutes. Transfer to a bowl, reserving drippings.
Add corn and bell pepper, cook until browned and crisp-tender, about 4 minutes. Add scallions and garlic; cook until softened, about 2 minutes.
Stir in Cajun seasoning and tomato paste; cook until vegetables are coated, about 1 minute.
Stir in diced tomatoes and water; bring to a boil. Add pasta and reduce heat to simmer.
Cook until pasta is tender and most of the liquid has been absorbed, about 15 minutes. Stir in sausage and scallions.
Stir in cream and cook until starting to bubble.
Remove from heat and stir in cheeses until melted, about 2 minutes.
Sprinkle with parsley and serve immediately.
Notes
For a spicier dish, add an extra pinch of Cajun seasoning or a dash of hot sauce.
