1 pound pasta (penne, rotini, or your favorite)
1 pound cajun sausage, sliced
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 (14.5 ounce) can diced tomatoes, undrained
1 cup heavy cream
1/2 cup grated parmesan cheese
1 teaspoon cajun seasoning (or more to taste)
1/4 teaspoon red pepper flakes (optional)
salt and pepper to taste
fresh parsley, chopped (for garnish)
Instructions
Cook pasta, reserving 1 cup pasta water.
Brown sausage in olive oil. Add onion, bell pepper, and garlic; cook until softened.
Stir in diced tomatoes, Cajun seasoning, and red pepper flakes. Simmer for 5 minutes.
Stir in heavy cream and Parmesan cheese. Simmer until thickened.
Toss pasta with sauce, adding pasta water if needed. Season with salt and pepper.
Garnish with parsley and serve.
Notes
Adjust the amount of Cajun seasoning and red pepper flakes to your desired level of spiciness.
