  • 8 oz vegan beef sausage (sliced (such as Beyond Meat or Field Roast))
  • 8 oz pasta (such as penne or fusilli)
  • 1 tbsp olive oil
  • 0.5 onion (diced)
  • 3 cloves garlic (minced)
  • 14 oz diced tomatoes (canned)
  • 0.5 cup vegetable broth
  • 0.5 cup unsweetened non-dairy milk (such as almond milk or oat milk)
  • 2 tbsp nutritional yeast
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish (optional))

Instructions 

  • Cook pasta until al dente. Drain and set aside.
  • Heat olive oil in a skillet, cook sausage until browned. Remove and set aside.
  • Add onion to the skillet and cook until translucent. Add garlic and cook for 1 minute.
  • Pour in diced tomatoes and vegetable broth. Simmer for 5-7 minutes.
  • Stir in non-dairy milk, nutritional yeast, basil, and oregano. Cook for 5 minutes until thickened.
  • Add pasta and sausage back into the skillet and toss to coat.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with parsley if desired.

Notes

Adjust the amount of non-dairy milk to achieve your desired sauce consistency.
