8ozpasta(such as penne or fusilli)
1tbspolive oil
0.5onion(diced)
3clovesgarlic(minced)
14ozdiced tomatoes(canned)
0.5cupvegetable broth
0.5cupunsweetened non-dairy milk(such as almond milk or oat milk)
2tbspnutritional yeast
1tspdried basil
1tspdried oregano
Salt and pepper(to taste)
Fresh parsley(chopped, for garnish (optional))
Instructions
Cook pasta until al dente. Drain and set aside.
Heat olive oil in a skillet, cook sausage until browned. Remove and set aside.
Add onion to the skillet and cook until translucent. Add garlic and cook for 1 minute.
Pour in diced tomatoes and vegetable broth. Simmer for 5-7 minutes.
Stir in non-dairy milk, nutritional yeast, basil, and oregano. Cook for 5 minutes until thickened.
Add pasta and sausage back into the skillet and toss to coat.
Season with salt and pepper to taste.
Serve hot, garnished with parsley if desired.
