A delicious one-pan meal featuring crispy roasted potatoes and flavorful garlic butter chicken, perfect for a satisfying dinner.

Ingredients

Potatoes

  • 4 medium potatoes, diced
  • 2 tablespoons olive oil
  • salt and pepper to taste salt and pepper (to taste)

Chicken

  • 1 pound chicken breast, cut into bite-sized pieces
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Garnish

  • fresh parsley for garnish (optional) fresh parsley (optional)

Instructions 

  • Preheat oven to 425°F (220°C). Toss potatoes with olive oil, salt, and pepper; roast for 25-30 minutes.
  • Heat a skillet over medium heat, melt butter, add garlic, thyme, and paprika; sauté 1 minute.
  • Add chicken to skillet, season with salt and pepper; cook 6-8 minutes until cooked through.
  • Remove potatoes from oven, add to skillet with chicken, toss to combine.
  • Garnish with parsley if desired and serve hot.

Notes

For extra crispiness, broil the potatoes for an additional 2-3 minutes before adding to the skillet.
