Enjoy these soft and gooey oatmeal chocolate chip cookies with a perfect balance of sweetness and wholesome oats.

Ingredients

Dough

  • 1/2 cup butter (softened)
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg egg (at room temperature)
  • 1 1/4 cup old fashioned whole rolled oats
  • 1 cup AP flour
  • 1/8 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup milk chocolate chips

Instructions 

  • Preheat oven to 350F, line baking sheet with parchment.
  • Cream butter, brown sugar, and granulated sugar until combined. Add egg and vanilla, mix until light and fluffy.
  • Mix in flour, oats, cinnamon, baking soda, and salt; fold in chocolate chips.
  • Scoop 8 dough balls onto baking sheet, press to 1 inch thickness, bake 11-12 minutes.
  • Cool on baking sheet for 20 minutes, then transfer to a rack to cool fully.

Notes

For softer cookies, do not overbake.
