  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces pasta (penne, rotini, or farfalle work well)
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup pesto
  • 1/4 cup grated parmesan cheese
  • salt and pepper to taste
  • optional: cherry tomatoes, spinach, or other vegetables

Instructions 

  • Brown chicken in olive oil; remove and set aside.
  • Sauté onion and garlic until softened.
  • Add pasta and chicken broth; simmer until pasta is cooked.
  • Stir in heavy cream, pesto, and Parmesan cheese.
  • Return chicken to pot; season with salt and pepper.
  • Add optional vegetables; serve immediately.
