A quick and easy ramen recipe perfect for kids! This customizable dish is packed with flavor and nutrients.

1 package instant ramen (chicken or vegetable flavor)
1 cup water
1/2 cup low-sodium chicken broth
1/4 cup frozen mixed vegetables (peas, carrots, corn)
1/4 cup cooked chicken or tofu, diced (optional)
1/2 hard-boiled egg, sliced (optional)
1 teaspoon soy sauce (low sodium)
pinch of sesame seeds (optional)
Instructions
Bring water and chicken broth to a boil in a saucepan.
Add ramen noodles and flavor packet. Cook per package directions.
Stir in vegetables and chicken/tofu (if using) during the last minute.
Remove from heat and stir in soy sauce.
Pour ramen into a bowl.
Top with egg and sesame seeds (if using). Cool slightly before serving.
Notes
Adjust the amount of soy sauce to your child's taste. You can also add other vegetables like spinach or mushrooms.
