A simple and flavorful pasta dish featuring spinach, tomatoes, and Parmesan cheese. Perfect for a quick and satisfying weeknight meal.

Ingredients

1 pound pasta (spaghetti, penne, or your favorite)

2 tablespoons olive oil

2 cloves garlic, minced

1 (28 ounce) can crushed tomatoes

1 (10 ounce) package frozen spinach, thawed and squeezed dry

1/2 cup grated parmesan cheese

salt and pepper to taste

optional: red pepper flakes for heat

Instructions 

  • Cook pasta, reserving 1 cup of pasta water.
  • Heat olive oil, add garlic, and cook until fragrant.
  • Stir in tomatoes, salt, pepper, and red pepper flakes (if using). Simmer.
  • Add spinach and cook until heated through.
  • Add pasta to sauce, toss to coat, adding pasta water if needed.
  • Stir in Parmesan cheese and serve.

Notes

Add a dollop of ricotta cheese for extra creaminess.
