  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound pasta (such as penne, rotini, or fettuccine)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons butter
  • 1/4 cup heavy cream (optional, for extra creaminess)
  • 1/4 cup chopped fresh parsley
  • salt and pepper to taste
  • optional: red pepper flakes for a little heat

Instructions 

  • Cook pasta, drain, and set aside.
  • Cook chicken in olive oil until browned; season with salt and pepper.
  • Add garlic and cook until fragrant.
  • Pour in chicken broth and simmer, scraping browned bits.
  • Stir in Parmesan cheese and butter until melted. Add heavy cream if desired.
  • Add pasta, parsley, and red pepper flakes (if using). Season and serve.

Notes

For a richer flavor, use bone-in, skin-on chicken thighs. Just be sure to adjust the cooking time accordingly.
