A quick and nutritious meal combining roasted sweet potatoes, tender chicken, and fresh vegetables for a wholesome bowl.

Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes, diced
  • 1 lb chicken breast, cubed
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup broccoli florets
  • 1 avocado avocado, sliced (optional)
  • fresh cilantro for garnish (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper; spread on a baking sheet.
  • Mix chicken with remaining olive oil, paprika, garlic powder, salt, and pepper; add to baking sheet.
  • Bake for 25 minutes, stirring halfway. Add broccoli in last 5 minutes.
  • Remove from oven, assemble bowls with chicken, sweet potatoes, broccoli, and optional avocado and cilantro.

Notes

Feel free to add more vegetables or adjust seasonings to taste.
