A quick and nutritious meal combining roasted sweet potatoes, tender chicken, and fresh vegetables for a wholesome bowl.
Ingredients
Sweet Potatoes

medium
sweet potatoes, diced
1
lb
chicken breast, cubed
2
tablespoons
olive oil
1
teaspoon
paprika
1
teaspoon
garlic powder
1
teaspoon
salt
0.5
teaspoon
black pepper
1
cup
broccoli florets
1
avocado
avocado, sliced (optional)
fresh
cilantro
for garnish (optional)
Instructions
Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper; spread on a baking sheet.
Mix chicken with remaining olive oil, paprika, garlic powder, salt, and pepper; add to baking sheet.
Bake for 25 minutes, stirring halfway. Add broccoli in last 5 minutes.
Remove from oven, assemble bowls with chicken, sweet potatoes, broccoli, and optional avocado and cilantro.
Notes
Feel free to add more vegetables or adjust seasonings to taste.
