Ingredients

  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup cooked rice (white or brown)
  • 1/2 cup corn (canned or frozen)
  • 1/2 cup black beans (canned, rinsed and drained)
  • 1/4 cup salsa
  • 1/4 cup shredded cheddar cheese
  • optional toppings: sour cream, avocado, lettuce, chopped tomatoes, green onions

Instructions 

  • Cook ground beef or turkey in a skillet until browned; drain grease.
  • Stir in taco seasoning with a little water if needed.
  • Layer rice, seasoned meat, corn, and black beans in a bowl.
  • Top with salsa, cheese, and desired toppings.
  • Serve immediately.

Notes

Add a dollop of Greek yogurt instead of sour cream for a healthier option.
