1 pound ground beef or turkey
1 packet taco seasoning
1 cup cooked rice (white or brown)
1/2 cup corn (canned or frozen)
1/2 cup black beans (canned, rinsed and drained)
1/4 cup salsa
1/4 cup shredded cheddar cheese
optional toppings: sour cream, avocado, lettuce, chopped tomatoes, green onions
Instructions
Cook ground beef or turkey in a skillet until browned; drain grease.
Stir in taco seasoning with a little water if needed.
Layer rice, seasoned meat, corn, and black beans in a bowl.
Top with salsa, cheese, and desired toppings.
