These easy vegan burrito bowls are packed with flavor and nutrients. A quick and healthy meal perfect for lunch or dinner!
Ingredients
1 cup cooked brown rice
1 (15-ounce) can black beans, rinsed and drained
1 cup corn (fresh, frozen, or canned)
1 avocado, diced
1/2 cup salsa
1/4 cup chopped cilantro
1 lime, cut into wedges
optional toppings: vegan sour cream, hot sauce, shredded lettuce
Instructions
Cook brown rice according to package directions.
Warm black beans and corn in a saucepan or microwave.
Assemble bowls with brown rice as a base.
Top with black beans, corn, diced avocado, and salsa.
Garnish with cilantro and lime juice.
Add optional toppings as desired.
Notes
