These easy vegan burrito bowls are packed with flavor and nutrients. A quick and healthy meal perfect for lunch or dinner!

Ingredients

  • 1 cup cooked brown rice
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 avocado, diced
  • 1/2 cup salsa
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges
  • optional toppings: vegan sour cream, hot sauce, shredded lettuce

Instructions 

  • Cook brown rice according to package directions.
  • Warm black beans and corn in a saucepan or microwave.
  • Assemble bowls with brown rice as a base.
  • Top with black beans, corn, diced avocado, and salsa.
  • Garnish with cilantro and lime juice.
  • Add optional toppings as desired.
