Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
Divide the batter into three separate bowls. Leave one bowl plain for the white layer.
Add red gel food coloring to one bowl, mixing until you achieve your desired shade of red. Do the same with blue gel food coloring for the last bowl, mixing until you reach your desired shade of blue.
Pour the red batter into the first prepared cake pan, the white batter into the second, and the blue batter into the third. Smooth the tops with a spatula.
Bake for 25-30 minutes, or until a toothpick inserted into the center of each cake comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
While the cakes cool, prepare the frosting. In a large bowl, beat together the powdered sugar and softened butter until smooth. Add heavy cream and vanilla extract, mixing until light and fluffy.
Once the cakes are completely cooled, level the tops if necessary. Place the red cake layer on a serving plate and spread a layer of frosting on top.
Add the white cake layer on top of the red layer, spreading frosting on top of that layer as well. Finally, place the blue cake layer on top.
Frost the entire cake with the remaining buttercream frosting, smoothing it out evenly.
Decorate the top of the cake with fresh strawberries and blueberries for a festive touch.
Slice and serve your beautiful Red, White, & Blue Ombré Cake to celebrate any special occasion!
