A quick and delicious meal featuring tender steak and flavorful garlic butter zucchini. Perfect for a weeknight dinner!
Ingredients

1 lb steak (ribeye, sirloin, or your favorite cut), about 1 inch thick
2 medium zucchini, sliced into 1/4-inch rounds
4 tbsp butter, divided
4 cloves garlic, minced
1 tbsp olive oil
1/2 tsp dried thyme
1/4 tsp red pepper flakes (optional)
salt and black pepper to taste
Instructions
Pat steak dry, season with salt and pepper.
Heat olive oil in skillet, sear steak 3-4 minutes per side.
Remove steak, let rest, tent with foil.
Add 2 tbsp butter to skillet, cook zucchini 5-7 minutes.
Add garlic, thyme, red pepper flakes; cook 1 minute.
Stir in remaining butter. Slice steak, serve over zucchini.
Notes
For a richer flavor, add a pat of garlic herb butter on top of the steak while it rests.
