A quick and delicious meal featuring tender steak and flavorful garlic butter zucchini. Perfect for a weeknight dinner!

  • 1 lb steak (ribeye, sirloin, or your favorite cut), about 1 inch thick
  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 4 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes (optional)
  • salt and black pepper to taste

Instructions 

  • Pat steak dry, season with salt and pepper.
  • Heat olive oil in skillet, sear steak 3-4 minutes per side.
  • Remove steak, let rest, tent with foil.
  • Add 2 tbsp butter to skillet, cook zucchini 5-7 minutes.
  • Add garlic, thyme, red pepper flakes; cook 1 minute.
  • Stir in remaining butter. Slice steak, serve over zucchini.

Notes

For a richer flavor, add a pat of garlic herb butter on top of the steak while it rests.
