Cool and creamy cheesecake bars bursting with mixed berries. These frozen treats are perfect for a refreshing dessert.

Ingredients

Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cup sugar
  • 6 tbsp unsalted butter, melted

Filling

  • 8 oz cream cheese, softened
  • 0.5 cup plain Greek yogurt or sour cream
  • 0.33 cup honey or sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream, whipped to soft peaks

Berry Topping

  • 1.5 cups mixed berries (fresh or frozen)
  • 2 tbsp honey or sugar
  • 1 tsp lemon juice

Instructions 

  • Mix graham crumbs, sugar, and melted butter. Press into a parchment-lined 8×8 inch pan. Freeze.
  • Simmer berries, sweetener, and lemon juice for 5–7 minutes, until thick. Cool slightly.
  • Beat cream cheese, yogurt, sweetener, and vanilla until smooth. Fold in whipped cream.
  • Spread cheesecake filling over the frozen crust. Swirl berry mixture on top.
  • Freeze for at least 4 hours or overnight until firm.
  • Let sit at room temp for 5–10 mins before slicing. Enjoy chilled!

Notes

For easier slicing, run a knife under hot water before each cut.
