Cool and creamy cheesecake bars bursting with mixed berries. These frozen treats are perfect for a refreshing dessert.
Ingredients
Crust

graham cracker crumbs

sugar

unsalted butter, melted
Filling

cream cheese, softened

plain Greek yogurt or sour cream

honey or sugar

vanilla extract

heavy cream, whipped to soft peaks
Berry Topping

mixed berries (fresh or frozen)

honey or sugar

lemon juice
Instructions
Mix graham crumbs, sugar, and melted butter. Press into a parchment-lined 8×8 inch pan. Freeze.
Simmer berries, sweetener, and lemon juice for 5–7 minutes, until thick. Cool slightly.
Beat cream cheese, yogurt, sweetener, and vanilla until smooth. Fold in whipped cream.
Spread cheesecake filling over the frozen crust. Swirl berry mixture on top.
Freeze for at least 4 hours or overnight until firm.
Let sit at room temp for 5–10 mins before slicing. Enjoy chilled!
Notes
For easier slicing, run a knife under hot water before each cut.
