This flavorful dish combines tender chicken thighs with roasted potatoes, all coated in garlic butter and herbs for a comforting meal.

Instructions
Preheat oven to 400°F (200°C).
In a skillet, melt 2 tbsp butter, sauté garlic, then brown seasoned chicken 4-5 mins each side. Remove and set aside.
Add diced potatoes to the skillet, season, and stir in garlic butter. Place chicken on top, add remaining butter.
Transfer skillet to oven and bake 25-30 mins until chicken is cooked and potatoes are tender. Garnish with parsley if desired.
Notes
Ensure chicken is cooked through before serving.
