This flavorful dish combines tender chicken thighs with roasted potatoes, all coated in garlic butter and herbs for a comforting meal.

Ingredients

Protein

  • 4 pieces chicken thighs or breasts

Vegetables

  • 4 medium potatoes, diced

Dairy & Fats

  • 4 tablespoons butter

Garlic & Herbs

  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Seasonings

  • to taste salt and pepper

Garnish

  • optional fresh parsley for garnish

Instructions 

  • Preheat oven to 400°F (200°C).
  • In a skillet, melt 2 tbsp butter, sauté garlic, then brown seasoned chicken 4-5 mins each side. Remove and set aside.
  • Add diced potatoes to the skillet, season, and stir in garlic butter. Place chicken on top, add remaining butter.
  • Transfer skillet to oven and bake 25-30 mins until chicken is cooked and potatoes are tender. Garnish with parsley if desired.

Notes

Ensure chicken is cooked through before serving.
