This one-pan meal features juicy chicken thighs and tender potatoes roasted to perfection with garlic and parmesan. It's a simple and delicious dinner that's ready in under an hour!

4 boneless, skinless chicken thighs
1.5 lbs baby potatoes, halved or quartered if large
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried italian herbs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated parmesan cheese
2 tablespoons butter, melted
fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 400°F (200°C).
Toss potatoes with 1 tbsp olive oil, garlic, herbs, salt, and pepper. Spread on baking sheet.
Toss chicken with remaining olive oil, salt, and pepper. Place on baking sheet with potatoes.
Bake for 25-30 minutes, until chicken is cooked and potatoes are tender.
Brush chicken and potatoes with melted butter. Sprinkle with Parmesan cheese.
Return to oven for 2-3 minutes, until cheese is melted. Garnish with parsley and serve.
Notes
For extra crispy potatoes, parboil them for 5 minutes before roasting.
