This one-pan meal features juicy chicken thighs and tender potatoes roasted to perfection with garlic and parmesan. It's a simple and delicious dinner that's ready in under an hour!

  • 4 boneless, skinless chicken thighs
  • 1.5 lbs baby potatoes, halved or quartered if large
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons butter, melted
  • fresh parsley, chopped (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss potatoes with 1 tbsp olive oil, garlic, herbs, salt, and pepper. Spread on baking sheet.
  • Toss chicken with remaining olive oil, salt, and pepper. Place on baking sheet with potatoes.
  • Bake for 25-30 minutes, until chicken is cooked and potatoes are tender.
  • Brush chicken and potatoes with melted butter. Sprinkle with Parmesan cheese.
  • Return to oven for 2-3 minutes, until cheese is melted. Garnish with parsley and serve.

Notes

For extra crispy potatoes, parboil them for 5 minutes before roasting.
