Ingredients

Dough

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C) and line baking sheet with parchment.
  • Cream butter, sugars until fluffy; beat in egg and vanilla.
  • Mix dry ingredients; gradually add to wet, combine.
  • Beat cream cheese, powdered sugar, vanilla until smooth.
  • Form dough balls, add cheesecake filling, seal, and bake 12-15 mins.
