Ingredients

Dough

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon brewed espresso or strong coffee
  • 1/4 cup molasses

Icing

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk (for icing)

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  • Mix dry ingredients in a bowl; cream butter and sugars, then add egg, vanilla, espresso, and molasses.
  • Combine wet and dry ingredients, form dough, and drop tablespoon-sized balls onto sheet.
  • Bake for 10-12 minutes; cool on wire rack. Mix powdered sugar with milk for icing and drizzle over cookies.

Notes

Chill the dough if it's too soft for easier handling.
