Ingredients

Dough

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract

Filling

  • cream cheese frosting (for filling)

Instructions 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  • Mix dry ingredients; beat butter and sugars until creamy.
  • Add egg, molasses, vanilla; combine well.
  • Gradually mix in dry ingredients; form dough balls and bake 8-10 mins.
  • Cool cookies, spread frosting on flat sides, and sandwich together.
