This Cowboy Butter Chicken Linguine is a quick and flavorful meal that's ready in just 30 minutes! Tender chicken and perfectly cooked linguine are coated in a rich and savory cowboy butter sauce.
Ingredients
1 pound linguine pasta
1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
4 tablespoons butter
4 cloves garlic, minced
1 tablespoon italian seasoning
1 teaspoon smoked paprika
1/2 teaspoon red pepper flakes (optional)
1/4 cup chopped fresh parsley
1/4 cup chopped fresh chives
1/4 cup grated parmesan cheese
salt and pepper to taste
cowboy butter sauce (see instructions for ingredients)
Instructions
Cook linguine, reserving 1 cup pasta water.
Prepare Cowboy Butter Sauce: Melt butter, add garlic, Italian seasoning, smoked paprika, and red pepper flakes. Cook 1 minute. Add parsley, chives, and Parmesan. Season with salt and pepper.
Cook chicken in olive oil until browned and cooked through. Season with salt and pepper.
Add linguine to the skillet with chicken. Pour Cowboy Butter Sauce over. Toss to coat.
If sauce is too thick, add pasta water until desired consistency.
Serve immediately, garnished with extra parsley, chives, and Parmesan cheese, if desired.
Notes
Adjust the amount of red pepper flakes to your spice preference.
