This Cowboy Butter Chicken Linguine is a quick and flavorful meal that's ready in just 30 minutes! Tender chicken and perfectly cooked linguine are coated in a rich and savory cowboy butter sauce.

Ingredients

  • 1 pound linguine pasta
  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon italian seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 1/4 cup grated parmesan cheese
  • salt and pepper to taste
  • cowboy butter sauce (see instructions for ingredients)

Instructions 

  • Cook linguine, reserving 1 cup pasta water.
  • Prepare Cowboy Butter Sauce: Melt butter, add garlic, Italian seasoning, smoked paprika, and red pepper flakes. Cook 1 minute. Add parsley, chives, and Parmesan. Season with salt and pepper.
  • Cook chicken in olive oil until browned and cooked through. Season with salt and pepper.
  • Add linguine to the skillet with chicken. Pour Cowboy Butter Sauce over. Toss to coat.
  • If sauce is too thick, add pasta water until desired consistency.
  • Serve immediately, garnished with extra parsley, chives, and Parmesan cheese, if desired.

Notes

Adjust the amount of red pepper flakes to your spice preference.
