  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 tbsp fresh parsley, chopped (optional)
  • salt and pepper to taste

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook chicken in olive oil until browned. Add mushrooms and garlic; cook until softened.
  • Stir in heavy cream, chicken broth, and cream cheese until smooth. Season with salt and pepper.
  • Pour mixture into a greased baking dish.
  • Sprinkle with mozzarella and Parmesan cheese.
  • Bake for 20-25 minutes, or until cheese is melted and bubbly. Garnish with parsley (optional).

Notes

For a richer flavor, use bone-in, skin-on chicken thighs and brown them in the skillet before removing the skin.
