1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
1 tbsp olive oil
8 oz mushrooms, sliced
4 cloves garlic, minced
1/2 cup heavy cream
1/4 cup chicken broth
4 oz cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 tbsp fresh parsley, chopped (optional)
salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
Cook chicken in olive oil until browned. Add mushrooms and garlic; cook until softened.
Stir in heavy cream, chicken broth, and cream cheese until smooth. Season with salt and pepper.
Pour mixture into a greased baking dish.
Sprinkle with mozzarella and Parmesan cheese.
Bake for 20-25 minutes, or until cheese is melted and bubbly. Garnish with parsley (optional).
Notes
For a richer flavor, use bone-in, skin-on chicken thighs and brown them in the skillet before removing the skin.
