Ingredients

Loaf Ingredients

  • 1.5 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 0.33 cup melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tbsp freshly squeezed lemon juice
  • 2 tsp freshly grated lemon zest
  • 0.5 tsp vanilla extract
  • 0.5 cup milk
  • 1 cup blueberries (fresh or frozen)

Glaze Ingredients

  • 2 tbsp melted butter
  • 0.5 cup powdered sugar
  • 0.5 tsp vanilla extract
  • 2 tbsp freshly squeezed lemon juice

Instructions 

  • Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan.
  • Whisk together flour, baking powder, and salt.
  • Mix melted butter, sugar, vanilla, eggs, zest, and juice.
  • Add dry ingredients and milk alternately, mixing until combined.
  • Gently fold in blueberries.
  • Pour batter into pan and smooth top.
  • Bake 55-60 minutes, or until a toothpick comes out clean.
  • Cool loaf in pan for 15 minutes, then transfer to platter.
  • Whisk glaze ingredients until smooth.
  • Drizzle glaze over warm loaf and allow to soak in before slicing.

Notes

For a richer flavor, brown the butter before adding it to the batter. Be careful not to overmix the batter once the dry ingredients are added to keep the loaf tender.
