Delicious homemade sweet rolls filled with a vibrant blueberry lemon filling and topped with a tangy lemon glaze. Perfect for breakfast or brunch!

Ingredients

Sweet Rolls Dough

  • All-purpose flour
  • Granulated sugar
  • Rapid Rise yeast
  • Salt
  • Water
  • Butter
  • Eggs

Blueberry Filling

  • Blueberries
  • Lemons
  • Granulated sugar

Lemon Glaze

  • Confectioner’s Sugar
  • Lemons

Instructions 

  • Make the sweet rolls dough
  • Combine flour, yeast, sugar, and salt in a mixer.
  • Melt butter and add to 120°F water.
  • Pour butter mixture into flour and combine. Add egg.
  • Add flour gradually until slightly sticky.
  • Cover and rest for 10 minutes.
  • Make the blueberry filling
  • Combine blueberries and sugar in a saucepan.
  • Heat on medium-low, smash berries, and release juices.
  • Stir in lemon juice and cornstarch.
  • Remove from heat and cool.
  • Preheat oven to 350°
  • Prepare a 13x9 baking dish with baking spray.
  • Assemble the sweet rolls
  • Roll dough into a 10x15 rectangle.
  • Spread melted butter onto the dough.
  • Spread cooled blueberry filling and roll tightly.
  • Slice into 1-inch slices.
  • Place rolls cut side down in the baking dish.
  • Bake for 25-30 minutes.
  • Bake and Glaze
  • Cool for 15 minutes before icing.
  • Make glaze: combine lemon zest, juice, and sugar. Drizzle over rolls.

Notes

For best results, use fresh, high-quality blueberries and lemons.
