These Mini No-Bake Cheesecakes are a simple and delicious dessert that requires no baking! Perfect for a quick treat or a party, they're easy to customize with your favorite toppings.

Ingredients

Crust

  • 2 cups graham cracker crumbs (about 16 full sheet graham crackers)
  • 1/3 cup packed light or dark brown sugar
  • 1/2 cup unsalted butter, melted

Filling

  • 1 cup cold heavy cream or heavy whipping cream
  • 16 ounces full-fat brick cream cheese, softened (to room temperature)
  • 1/3 cup granulated sugar
  • 2 Tablespoons sour cream or plain yogurt (at room temperature)
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon pure vanilla extract
  • optional desired toppings (see recipe Note)

Instructions 

  • Line muffin pans with cupcake liners.
  • Process graham crackers into crumbs. Combine with brown sugar and melted butter. Press into cupcake liners.
  • Optionally bake crusts at 350°F (177°C) for 5 minutes. Cool for 10 minutes.
  • Whip heavy cream to stiff peaks. Beat cream cheese and sugar until smooth. Add sour cream, lemon juice, and vanilla. Fold in whipped cream.
  • Spoon or pipe filling over crusts. Smooth the tops.
  • Refrigerate for at least 3 hours and up to 2 days.
  • Keep refrigerated until ready to serve. Serve with toppings.
  • Store leftovers in the refrigerator for up to 5 days.

Notes

Get creative with toppings like fresh fruit, chocolate shavings, or a drizzle of caramel!
