Ingredients

Cake Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ¾ cup vegetable oil
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 3 cups grated carrots (about 4-5 medium carrots)
  • ½ cup crushed pineapple (drained (optional))
  • ½ cup chopped walnuts or pecans (optional)

Cream Cheese Frosting

  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Prepare pan.
  • Whisk together dry ingredients.
  • Beat together wet ingredients.
  • Fold carrots and pineapple into wet mixture.
  • Fold dry ingredients into wet ingredients.
  • Fold in nuts if using.
  • Pour batter into pan and bake for 40-45 minutes.
  • Cool cake completely.
  • Beat cream cheese and butter until creamy. Add powdered sugar and vanilla. Stir in lemon juice if desired.
  • Spread frosting over cooled cake. Chill if needed.

Notes

For an extra touch, sprinkle chopped nuts on top of the frosting!
