2cupsall-purpose flour
1tspbaking soda
1tspbaking powder
2tspground cinnamon
½tspground nutmeg
¼tspsalt
1cupgranulated sugar
½cupbrown sugar
¾cupvegetable oil
3largeeggs(room temperature)
1tspvanilla extract
3cupsgrated carrots(about 4-5 medium carrots)
½cupcrushed pineapple(drained (optional))
½cupchopped walnuts or pecans(optional)
Cream Cheese Frosting
8ozcream cheese(softened)
½cupunsalted butter(softened)
3cupspowdered sugar
1tspvanilla extract
1tbspfresh lemon juice(optional)
Instructions
Preheat oven to 350°F (175°C). Prepare pan.
Whisk together dry ingredients.
Beat together wet ingredients.
Fold carrots and pineapple into wet mixture.
Fold dry ingredients into wet ingredients.
Fold in nuts if using.
Pour batter into pan and bake for 40-45 minutes.
Cool cake completely.
Beat cream cheese and butter until creamy. Add powdered sugar and vanilla. Stir in lemon juice if desired.
Spread frosting over cooled cake. Chill if needed.
