These no-bake avalanche cookies are a delightful combination of peanut butter, white chocolate, and marshmallows, perfect for a quick and easy treat.

Ingredients

Instructions
In a large mixing bowl, combine the rolled oats and a pinch of salt.
In a separate microwave-safe bowl, mix the peanut butter and honey (or maple syrup). Microwave for about 30 seconds until warm and easy to stir.
Add the vanilla extract to the peanut butter mixture and stir until well combined.
Pour the peanut butter mixture over the oats and mix until all the oats are evenly coated.
Gently fold in the white chocolate chips, mini marshmallows, and chopped nuts until evenly distributed.
Line a baking sheet with parchment paper. Using a spoon, drop tablespoon-sized portions of the mixture onto the parchment paper, forming cookies.
Refrigerate the cookies for at least 30 minutes to set.
Once set, remove from the refrigerator and enjoy your no-bake avalanche cookies!
Notes
You can substitute the nuts with your favorite type or omit them for a nut-free version.
