No-Bake Avalanche Cookies: Peanut Butter and White Chocolate Delight

These no-bake avalanche cookies are a delightful combination of peanut butter, white chocolate, and marshmallows, perfect for a quick and easy treat.

Instructions 

  • In a large mixing bowl, combine the rolled oats and a pinch of salt.
  • In a separate microwave-safe bowl, mix the peanut butter and honey (or maple syrup). Microwave for about 30 seconds until warm and easy to stir.
  • Add the vanilla extract to the peanut butter mixture and stir until well combined.
  • Pour the peanut butter mixture over the oats and mix until all the oats are evenly coated.
  • Gently fold in the white chocolate chips, mini marshmallows, and chopped nuts until evenly distributed.
  • Line a baking sheet with parchment paper. Using a spoon, drop tablespoon-sized portions of the mixture onto the parchment paper, forming cookies.
  • Refrigerate the cookies for at least 30 minutes to set.
  • Once set, remove from the refrigerator and enjoy your no-bake avalanche cookies!

Notes

You can substitute the nuts with your favorite type or omit them for a nut-free version.
