This no-bake cheesecake is a simple and delicious dessert that requires no oven time. It features a graham cracker crust and a creamy filling, topped with fresh berries.

Ingredients

Crust

  • 1.5 cups graham cracker crumbs
  • 1/3 cup packed brown sugar
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup butter, melted

Filling

  • 2 packages cream cheese, softened (8 ounces each)
  • 1/3 cup sugar
  • 2 teaspoons lemon juice
  • 2 cups heavy whipping cream

Topping

  • 2 cups sliced fresh strawberries
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 tablespoons sugar

Instructions 

  • Mix graham cracker crumbs, brown sugar, and cinnamon. Stir in melted butter. Press into a 9-inch springform pan. Refrigerate for 30 minutes.
  • Beat cream cheese, sugar, and lemon juice until smooth. Gradually add cream and beat until stiff peaks form.
  • Transfer mixture to crust and smooth the top. Refrigerate, covered, for eight hours or overnight.
  • Toss berries with sugar and let stand for 15 to 30 minutes.
  • Remove cheesecake from pan. Slice and serve with topping.

Notes

For a richer flavor, use full-fat cream cheese and heavy cream.
