This no-bake cheesecake is a simple and delicious dessert that requires no oven time. It features a graham cracker crust and a creamy filling, topped with fresh berries.
Ingredients
Crust
1.5cupsgraham cracker crumbs
1/3cuppacked brown sugar
0.5teaspoonground cinnamon
0.5cupbutter, melted
Filling
2packagescream cheese, softened(8 ounces each)
1/3cupsugar
2teaspoonslemon juice
2cupsheavy whipping cream
Topping
2cupssliced fresh strawberries
1cupfresh blueberries
1cupfresh raspberries
2tablespoonssugar
Instructions
Mix graham cracker crumbs, brown sugar, and cinnamon. Stir in melted butter. Press into a 9-inch springform pan. Refrigerate for 30 minutes.
Beat cream cheese, sugar, and lemon juice until smooth. Gradually add cream and beat until stiff peaks form.
Transfer mixture to crust and smooth the top. Refrigerate, covered, for eight hours or overnight.
Toss berries with sugar and let stand for 15 to 30 minutes.
Remove cheesecake from pan. Slice and serve with topping.
Notes
For a richer flavor, use full-fat cream cheese and heavy cream.
