Ingredients
Crust
1.5cupsfinely crushed graham cracker crumbs
3tablespoonsgranulated sugar
7tablespoonsmelted butter
Filling
18-ounce packagecream cheese, softened
114-ounce cansweetened condensed milk
0.33cupfreshly squeezed lemon juice
1teaspoonvanilla extract
Topping
121-ounce cancherry pie filling
Instructions
Combine graham cracker crumbs, sugar, and melted butter. Mix well.
Beat cream cheese until smooth.
Beat in sweetened condensed milk until combined.
Add lemon juice and vanilla extract, and stir well.
Set 6 punch cups on the counter.
Scoop 2 tablespoons of crumb mixture into each cup and press lightly.
Add 3 tablespoons of cheesecake mixture to each cup and spread evenly.
Distribute half of the cherry pie filling between the 6 cups.
Sprinkle 2 tablespoons of crumb mixture over the cherry layer.
Divide the remaining cheesecake mixture between the 6 cups and spread evenly.
Divide the reserved cherry pie filling evenly between the 6 cups, then sprinkle the top with a little crumb mixture.
Serve immediately or chill for up to 24 hours before serving.
Notes
For a richer flavor, use full-fat cream cheese. You can also substitute the cherry pie filling with other fruit fillings like blueberry or strawberry.
