This no-bake raspberry cheesecake is a delightful dessert that requires no oven time. It's perfect for hot days or when you want a quick and easy treat!

Ingredients

Crust

  • 200 g graham cracker crumbs
  • 100 g unsalted butter, melted

Filling

  • 600 g cream cheese, softened
  • 150 g powdered sugar
  • 250 ml heavy cream
  • 1 tsp vanilla extract
  • 10 g halal gelatin
  • 50 ml water

Topping

  • 200 g fresh raspberries
  • 100 g raspberry jam

Instructions 

  • Combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  • In a bowl, beat cream cheese and powdered sugar until smooth. Mix in heavy cream and vanilla extract.
  • Dissolve gelatin in water. Add to the cream cheese mixture.
  • Pour the mixture over the crust. Refrigerate for at least 4 hours.
  • Top with fresh raspberries and raspberry jam before serving.

Notes

For a smoother texture, ensure the cream cheese is fully softened before mixing.
