A comforting and hearty classic featuring tender chicken and soft, homemade dumpling noodles in a rich broth. Perfect for a cozy family meal.

Ingredients

Chicken & Broth

  • 2 tablespoons olive oil (divided)
  • 1 pound boneless chicken breasts (cut into bite-sized pieces)
  • sea or kosher salt and fresh black pepper (to taste)
  • 3 cans low-sodium chicken broth

Vegetables & Seasoning

  • 2 tablespoons butter
  • 0.5 cup diced celery
  • 0.5 cup diced carrot (or thinly sliced)
  • 0.5 cup diced onion
  • 2 cloves minced garlic
  • 1 bay leaf
  • 0.5 teaspoon dried thyme
  • 1 tablespoon fresh chopped parsley

Dumplings

  • 1.5 cups all-purpose flour (plus more if needed and for the work surface)
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 egg
  • 0.5 cup milk

Instructions 

  • Brown chicken in oil, remove and set aside.
  • Sauté celery, carrot, onion, garlic, bay leaf, and thyme until softened.
  • Stir in broth, add chicken, and simmer.
  • Whisk flour, baking powder, and salt. Add oil and mix until crumbly.
  • Add egg and milk, stir. Add flour if too loose.
  • Roll out dough on floured surface.
  • Cut dough into ½-inch wide and 2-3 inch long pieces.
  • Drop dumplings into simmering soup.
  • Repeat with remaining dough.
  • Cover and simmer for 20-25 minutes.
  • Season to taste, remove bay leaf.
  • Stir in parsley and serve.

Notes

For extra flavor, use homemade chicken broth.
