A comforting and hearty classic featuring tender chicken and soft, homemade dumpling noodles in a rich broth. Perfect for a cozy family meal.

boneless chicken breasts
(cut into bite-sized pieces)
sea or kosher salt and fresh black pepper
(to taste)

Vegetables & Seasoning

diced carrot
(or thinly sliced)

minced garlic

bay leaf

all-purpose flour
(plus more if needed and for the work surface)

Instructions
Brown chicken in oil, remove and set aside.
Sauté celery, carrot, onion, garlic, bay leaf, and thyme until softened.
Stir in broth, add chicken, and simmer.
Whisk flour, baking powder, and salt. Add oil and mix until crumbly.
Add egg and milk, stir. Add flour if too loose.
Roll out dough on floured surface.
Cut dough into ½-inch wide and 2-3 inch long pieces.
Drop dumplings into simmering soup.
Repeat with remaining dough.
Cover and simmer for 20-25 minutes.
Season to taste, remove bay leaf.
Stir in parsley and serve.
Notes
For extra flavor, use homemade chicken broth.
