  • 1 pound pasta (spaghetti, linguine, or penne)
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth (or chicken broth)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • optional toppings: grated parmesan cheese, fresh basil

Instructions 

  • Combine pasta, tomatoes, broth, onion, garlic, oregano, basil, red pepper flakes (if using), olive oil, salt, and pepper in a large skillet.
  • Bring to a boil, then reduce heat and simmer, stirring occasionally, until pasta is cooked and liquid is absorbed (15-20 minutes).
  • If needed, increase heat to thicken the sauce.
  • Taste and adjust seasonings.
  • Serve topped with Parmesan cheese and fresh basil, if desired.

Notes

For a richer flavor, use chicken broth instead of vegetable broth.
