1 pound pasta (spaghetti, linguine, or penne)
1 (28 ounce) can crushed tomatoes
4 cups vegetable broth (or chicken broth)
1 onion, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional)
2 tablespoons olive oil
salt and pepper to taste
optional toppings: grated parmesan cheese, fresh basil
Instructions
Combine pasta, tomatoes, broth, onion, garlic, oregano, basil, red pepper flakes (if using), olive oil, salt, and pepper in a large skillet.
Bring to a boil, then reduce heat and simmer, stirring occasionally, until pasta is cooked and liquid is absorbed (15-20 minutes).
If needed, increase heat to thicken the sauce.
Taste and adjust seasonings.
Serve topped with Parmesan cheese and fresh basil, if desired.
Notes
For a richer flavor, use chicken broth instead of vegetable broth.
