A quick and delicious one-pot meal combining pasta and broccoli for a wholesome, easy dinner.

Ingredients

Pasta and Broccoli

  • 8 oz pasta (penne or fusilli)
  • 2 cups broccoli florets
  • 3 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • to taste salt and pepper
  • 1/4 cup grated parmesan cheese (optional)
  • for garnish fresh parsley (optional)

Instructions 

  • Heat olive oil in a large pot over medium heat and sauté garlic and red pepper flakes for 1 minute.
  • Add pasta, broccoli, and vegetable broth; bring to a boil.
  • Reduce heat, cover, and simmer for 10-12 minutes until pasta is al dente and broccoli is tender.
  • Season with salt and pepper, stir in Parmesan if using, and serve garnished with parsley.

Notes

You can add red pepper flakes for extra spice or skip Parmesan for a vegan version.
